Knitting Projects

This past month I taught myself how to knit.  I always wanted to learn, so I watched a few clips on youtube and TA DA, Emma has a new hat and scarf.  I actually found knitting to be very relaxing.  At the end of the day, once Emma was in bed I would watch tv and knit.  It really helped clear my head before bedtime.   


Emma likes to play with her new scarf. She is constantly putting it around her neck or twirls it in the air. She also tries to wrap it around the dogs.



Running Journal

My friend Courtney made a cute Christmas journal, which I thought was very cute.  I asked her to make me a notebook, but didn't really know what to use it for.  I've been using the one she made me to for my education classes.  I then got the great idea to make one to track all my running adventures.  In March, I'm running my first 5K and one way I stay motivated is to have something cute to look at.  So here is my cute journal which helps me stay on track with exercise.

Yummy Recipes

Below are some of my go to favorite recipes.

Shrimp Continental
This was my Grandma Slawson's recipe.  It is great on cold winter days, but not the best for your waistline.  You could also make it with chicken.
1/4 cup chopped onion
2 tablespoon butter
1 can cream of celery
1/2 cup milk
1/2 cup cheddar cheese
2 tablespoon minced parsley
2- 3 T lemon juice (really it is your taste preference)
1/8 teaspoon Tabasco sauce
2 cups cooked shrimp

In a saucepan cook onion in butter until tender.  Blend in soup, milk, cheese, parsley, lemon juice and Tabasco sauce.  Let simmer while you cook shrimp in another pan.  Add shrimp to sauce and serve over rice.

Flank Steak Marinade
This recipe is one that my mom always cooked when I was growing up.
 
1 cup veggie oil
1/2 cup soy sauce
1/3 cup red wine vinegar
1/4 cup lemon juice
3 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1 teaspoon pepper
1 large onion sliced
1 cloves minced garlic (I use at least three cloves)

Mix all ingredients in a bowl and marinade flank steak for several hours in refrigerator
 
Penne with Asparagus and Pine Nuts
I got this recipe from my friend Kheresa Harmon.  It is very yummy and healthy.

8 oz penne pasta
2 teaspoons olive oil
2 garlic cloves minced
1/8 teaspoons crushed red pepper
3 cups (1 pound) fresh asparagus
1/2 cup chicken broth (I prefer homemade instead of store bought)
1/4 cup lemon juice
1/2 cup chopped sun dried tomatoes
1/2 teaspoon salt
1/2 cup Asiago cheese
2 tablespoons pine nuts

Cook pasta
heat oil and cook garlic & red pepper (2 min)
add asparagus, chicken broth and lemon juice.  Reduce heat and cook 5-10 min (depending on the thickness of your asparagus).  Stir in tomatoes, salt and pasta.  Sprinkle with cheese, pine nuts and serve.

The Lost Art of Real Cooking ~ Book Review

The Lost Art of Real Cooking
By: Ken Albala and Rosanna Nafziger
Jason gave me this wonderful book for Christmas and I find myself reading it all the time.  If you are someone who has to follow a detailed recipe, then this book may not be the best fit.  However, if you are the type who just kind of throws things together and has a yummy meal, then this book is for you.  The Lost Art of Real Cooking is like being told a story rather than following a formula.  So far my endevours mostly revolve around bread.  Currently, I am feeding my own Sourdough starter and perfecting homemade pizza dough.  I've also gotten better at roasting.  I made Cornish Game Hens for the first time and homemade gravy.  Next I want to tackle making my own butter and cheeses.  And yes, there is a chapter on fermented beverages.  Soon I'll be making psychic love wine and beer.  So if you want to take a step back in time and make your foods more naturally, then you will enjoy this book.  Happy reading and cooking!
